MOLE POBLANO PASTE 100gr
A rich savoury paste made with fried dried chillies, dried fruit and cocoa. Our very own Rolando spends a full day toasting spices and frying chillies to make each batch of Mole Poblano.
Makes approximately 300ml sauce (enough for 3-4 as a main course or to make 8-10 tacos).
Mole Poblano sauce is traditionally served on poached chicken or turkey with white rice on the side, but it is equally delicious served with a little refry and rice in a taco, or with fried eggs and tortillas
water, unrefined sugar, Masa Harina (ground nixtamalized corn), sunflower oil, Mexican dried chillies (10%) [pasilla and ancho], sesame paste, raisins, sea salt, cider vinegar, chocolate (3%) [cocoa nibs, sugar, almonds, cocoa powder, cinnamon], garlic, spices, cocoa powder.
Dilute this sachet with 250ml of stock or water, then simmer, blend, and serve hot.
